- 1 lb boneless chicken breasts, cut into bite-sized pieces
- 1 cup pineapple chunks (fresh or canned)
- 2 cups cooked jasmine rice
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1/2 cup chopped green onions
- Fresh cilantro for garnish
Instructions
- Heat oil in a large skillet over medium-high heat.
- Add chicken and cook until golden brown and cooked through, about 5-7 minutes.
- Add bell pepper and pineapple, cook for another 3 minutes.
- Stir in soy sauce and honey, cook until sauce thickens.
- Serve over cooked rice, garnish with green onions and cilantro.

- Use fresh pineapple for the best flavor.
- You can substitute chicken with tofu for a vegetarian version.
