- 3 pounds beef chuck, cut into chunks
- 1 cup red wine
- 2 carrots, sliced
- 2 onions, chopped
- 3 cloves garlic, minced
- 1 cup pearl onions
- 8 oz mushrooms, sliced
- 2 tbsp tomato paste
- 1 tsp thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Season the beef with salt and pepper. Brown in a skillet with olive oil, then transfer to the slow cooker.
- Add minced garlic, chopped onions, carrots, mushrooms, and pearl onions to the slow cooker.
- Pour in red wine, add tomato paste, thyme, and bay leaves.
- Cook on low for 8 hours until beef is tender and flavors meld.
- Remove bay leaves before serving. Garnish with fresh herbs if desired.
Notes
- You can substitute beef with lamb for a different flavor.
- Use a good-quality red wine for the best taste.
- Serve with crusty bread or mashed potatoes.
