- 1 pound kielbasa sausage, sliced
- 4 cups chicken broth
- 2 large potatoes, diced
- 2 carrots, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- In a large pot, sauté sliced kielbasa until browned. Remove and set aside.
- In the same pot, add onions and garlic, cook until fragrant.
- Add potatoes, carrots, broth, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer until vegetables are tender, about 20 minutes.
- Add cooked kielbasa back to the soup, simmer for an additional 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- You can substitute the kielbasa with Turkey sausage for a leaner option.
- For extra flavor, add a splash of smoked paprika or hot sauce.
