Ingredients

  • 1 pound kielbasa sausage, sliced
  • 4 cups chicken broth
  • 2 large potatoes, diced

Instructions

  1. In a large pot, sauté sliced kielbasa until browned. Remove and set aside.
  2. In the same pot, add onions and garlic, cook until fragrant.
  3. Add potatoes, carrots, broth, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer until vegetables are tender, about 20 minutes.
  5. Add cooked kielbasa back to the soup, simmer for an additional 5 minutes.
  6. Garnish with fresh parsley before serving.
