Instructions
- Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tablespoon olive oil, paprika, garlic powder, salt, and pepper. Roast for 25-30 minutes until tender.
- Meanwhile, season chicken breasts with salt, pepper, and a touch of olive oil. Grill over medium heat until cooked through, about 6-8 minutes per side. Slice into strips.
- Prepare cooked brown rice as per package instructions.
- Assemble the bowls: start with rice, top with grilled chicken, roasted sweet potatoes, cherry tomatoes, and cilantro.
- Serve warm, garnished with additional cilantro if desired.
