- 2 pounds beef stew meat, cut into chunks
- 3 carrots, sliced
- 3 potatoes, diced
- 2 celery stalks, chopped
- 1 large onion, diced
- 3 garlic cloves, minced
- 4 cups beef broth
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add beef chunks and cook until browned.
- Add diced onion and garlic; sauté until fragrant.
- Pour in beef broth and add thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Add carrots, potatoes, and celery; simmer another 30 minutes until vegetables are tender.
Notes
- Adjust seasoning to taste.
- For thicker stew, mash some potatoes before serving.
