- 1 lb (450 g) Italian sausage or ground beef
- 1 cup (150 g) frozen or homemade meatballs
- 1 package (9 oz) tortellini
- 4 cups (950 ml) chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup (150 g) chopped carrots and celery
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Fresh basil or parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add meatballs and cook until browned; remove and set aside.
- In the same pot, sauté garlic, carrots, and celery until tender.
- Pour in chicken broth and diced tomatoes, bring to a boil.
- Add meatballs and tortellini, cook for 8-10 minutes until tortellini is tender.
- Garnish with fresh herbs and serve hot.
Notes
- Use high-quality store-bought meatballs for convenience or homemade for extra flavor.
- You can add spinach or kale towards the end for extra greens.
