- 2 pounds beef stew meat, cut into cubes
- 3 carrots, sliced
- 3 potatoes, peeled and cubed
- 2 celery stalks, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium-high heat. Brown the beef cubes on all sides, then set aside.
- Sauté onion and garlic until fragrant. Add tomato paste and cook for another minute.
- Return beef to the pot, add carrots, potatoes, celery, herbs, salt, and pepper.
- Pour in beef broth and bring to a boil. Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender.
- Remove bay leaves, adjust seasoning, and serve hot with crusty bread.
Notes
- You can add peas or green beans towards the end for extra flavor and color.
