Ingredients

  • 2 pounds beef stew meat, cut into cubes
  • 3 carrots, sliced
  • 3 potatoes, peeled and cubed
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown the beef cubes on all sides, then set aside.
  2. Sauté onion and garlic until fragrant. Add tomato paste and cook for another minute.
  3. Return beef to the pot, add carrots, potatoes, celery, herbs, salt, and pepper.
  4. Pour in beef broth and bring to a boil. Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender.
  5. Remove bay leaves, adjust seasoning, and serve hot with crusty bread.
