- 4 boneless, skinless chicken breasts
- 1 cup fresh cranberries
- 1/2 cup granulated sugar
- 1/2 cup orange juice
- 8 oz brie cheese, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear chicken until golden brown on all sides, about 3-4 minutes per side.
- Transfer chicken to a baking dish.
- In a saucepan, combine cranberries, sugar, and orange juice over medium heat. Cook until cranberries burst and sauce thickens, about 10 minutes.
- Spread cranberry sauce over the chicken and top each breast with slices of brie cheese.
- Bake in the oven for 20-25 minutes until chicken is cooked through and cheese is melted and bubbly.
- Garnish with fresh thyme before serving.
