- 1 lb ground beef
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup enchilada sauce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onions and cook until translucent.
- Stir in ground beef and cook until browned.
- Add sliced peppers and garlic, cook for an additional 3 minutes.
- Pour in enchilada sauce, stir well, and simmer for 5 minutes.
- Sprinkle shredded cheese on top, cover, and let melt for 2-3 minutes.
- Garnish with fresh cilantro and serve hot.
Notes
- You can substitute ground turkey or chicken for beef.
- Add sliced olives or jalapenos for extra flavor.
- Best enjoyed fresh, but leftovers can be stored refrigerated for up to 2 days.
