- 2 lbs beef chuck roast, cut into chunks
- 4 carrots, sliced
- 3 potatoes, diced
- 1 cup peas
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Place beef chunks in the slow cooker. Add carrots, potatoes, onion, garlic, herbs, salt, and pepper.
- Pour beef broth and tomato paste over ingredients.
- Cook on low for 8 hours or high for 4 hours, until beef is tender.
- Add peas during the last 30 minutes of cooking. Serve hot.

- You can substitute with stew meat or tip roast.
- For extra flavor, sear beef before adding to the slow cooker.
- Serve with crusty bread for a complete meal.
