Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a small bowl, mix sugar and cinnamon.
- In a saucepan, combine water and vanilla, bring to a simmer, then add pecans and stir to coat.
- Add cinnamon-sugar mixture to the pecans and toss until evenly coated.
- Spread pecans on the prepared baking sheet in a single layer.
- Bake for 10-12 minutes, stirring halfway through, until golden and fragrant.
- Allow to cool before serving or storing in an airtight container.

- For extra crunch, bake for an additional 2 minutes. Keep a close eye to prevent burning.
