- 1 lb cooked chicken, shredded
- 4 cups chicken broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 small onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- 1 cup milk
- 2 tablespoons chopped parsley
Instructions
- In a large pot, combine chicken broth, vegetables, garlic powder, and thyme. Bring to a simmer.
- Add shredded chicken and cook until vegetables are tender, about 10 minutes.
- In a bowl, mix flour and baking powder. Add milk and stir until just combined.
- Drop spoonfuls of batter into simmering soup to form dumplings. Cover and cook for 15 minutes until dumplings are fluffy.
- Garnish with parsley and serve hot.
Notes
- For extra flavor, add a splash of lemon juice or a pinch of paprika.
- Make ahead and reheat for an even tastier meal.
