- 1 lb beef stew meat, cubed
- 3 large potatoes, diced
- 3 carrots, sliced
- 1 cup frozen peas
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp black pepper
- Salt to taste
Instructions
- Place beef, potatoes, carrots, onion, and garlic in the crock pot.
- Pour in beef broth and add tomato paste, thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours until beef is tender.
- Stir in frozen peas during the last 30 minutes of cooking.
- Serve hot with crusty bread if desired.
Notes
- For richer flavor, sear beef before adding to the crock pot.
- You can substitute fresh peas for frozen, added at the end.
