- 4 large potatoes, diced
- 1 lb beef sirloin, sliced
- 6 slices bacon, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss diced potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 30-35 minutes until crispy.
- Cook bacon in a skillet until crispy, then set aside. In the same skillet, brown sliced beef until cooked through.
- Combine roasted potatoes, beef, and bacon. Garnish with minced garlic and fresh parsley. Serve warm.
