- For the streusel topping: 1/2 cup brown sugar, 1/2 cup all-purpose flour, 1 teaspoon ground cinnamon, 1/4 cup unsalted butter, cubed
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, then vanilla, mixing well after each addition.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- To prepare streusel, combine brown sugar, flour, cinnamon, and cubed butter in a small bowl. Mix until crumbly.
- Drop spoonfuls of dough onto prepared baking sheets. Sprinkle streusel evenly over each cookie.
- Bake for 12-15 minutes or until golden brown. Let cool before serving.
Notes
- For a more intense cinnamon flavor, increase the cinnamon in the streusel.
- These cookies can be stored in an airtight container for up to 3 days.
