  • 1 cup graham cracker crumbs
  • 3 tbsp sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 tbsp vanilla bean paste
  • 1/2 cup sour cream
  • 4 tbsp unsalted butter
  • 1/2 cup packed brown sugar

Instructions

  1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla bean paste and sour cream. Mix until well combined.
  3. Pour filling over crust and bake for 50-60 minutes until set. Let cool completely.
  4. In a small saucepan, melt butter and brown sugar over medium heat until bubbly. Pour over cooled cheesecake before serving.
