- 1 cup graham cracker crumbs
- 3 tbsp sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 tbsp vanilla bean paste
- 1/2 cup sour cream
- 4 tbsp unsalted butter
- 1/2 cup packed brown sugar
Instructions
- Preheat oven to 325°F (160°C). Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla bean paste and sour cream. Mix until well combined.
- Pour filling over crust and bake for 50-60 minutes until set. Let cool completely.
- In a small saucepan, melt butter and brown sugar over medium heat until bubbly. Pour over cooled cheesecake before serving.

- Ensure cream cheese is at room temperature for smooth mixing.
- Chill cheesecake for at least 4 hours for best results.
