Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine flour, granulated sugar, baking soda, salt, and vanilla.
- Cut in cold butter until mixture resembles coarse crumbs.
- In a separate bowl, mix brown sugar and cinnamon for the crumble topping.
- Obtain dough and form small balls, flatten slightly, and place on baking sheet.
- Top each cookie with a spoonful of crumble mixture.
- Bake for 12-15 minutes until golden brown.
- Allow to cool before serving.
