Instructions
- Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess moisture.
- In a mixing bowl, combine zucchini, flour, Parmesan, garlic, eggs, pepper, and paprika. Mix well.
- Heat olive oil in a skillet over medium heat.
- Form the mixture into small patties and fry in batches until golden brown, about 3-4 minutes per side.
- Drain on paper towels and serve warm with dipping sauce.
Notes
- For extra crunch, add panko breadcrumbs to the mixture.
- Serve with sour cream, Greek yogurt, or a spicy aioli.
- These fritters can be baked in the oven at 400°F (200°C) for 15-20 minutes for a healthier option.
