Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, combine Parmesan cheese, panko breadcrumbs, garlic powder, Italian herbs, salt, and pepper.
- Brush zucchini slices with olive oil, then dip each slice into the breadcrumb mixture, pressing to adhere.
- Arrange coated zucchini slices on prepared baking sheet.
- Bake for 20-25 minutes until golden and crispy, flipping halfway through for even crispness.
