- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 pound cooked chicken, shredded
- 4 cups chicken broth
- 2 cans white beans, drained and rinsed
- 1 cup corn kernels
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1 cup heavy cream or sour cream
- Salt and pepper to taste
- Shredded cheese and cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions and garlic until fragrant.
- Add shredded chicken, chicken broth, beans, corn, cumin, chili powder, paprika, salt, and pepper. Bring to a simmer.
- Reduce heat and stir in heavy cream or sour cream, cooking until heated through.
- Serve hot, garnished with shredded cheese and cilantro.
Notes
- You can substitute cooked turkey or plant-based proteins for chicken.
- For a spicier kick, add jalapenos or hot sauce.
