- 2 cans (15 oz) white beans, drained and rinsed
- 4 slices bacon, crispy and crumbled
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh thyme or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
- Add garlic and cook for another minute.
- Pour in broth and bring to a simmer.
- Add beans and cook for 10 minutes, blending part of the soup for creaminess if desired.
- Season with salt and pepper to taste.
- Serve hot, topped with crumbled bacon and fresh herbs.
Notes
Adjust seasoning as needed. For a vegan version, substitute bacon with smoked paprika or sun-dried tomatoes.
