- 1 lb Italian sausage
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 package (9 oz) tortellini
- 1 cup spinach, chopped

- Fresh basil or parsley for garnish
Instructions
- Cook sausage in a large pot until browned; remove and set aside.
- Sauté onion and garlic in the same pot until translucent.
- Add chicken broth and bring to a boil.
- Stir in sausage and tortellini; cook until tortellini is tender.
- Reduce heat, add heavy cream and spinach; simmer until heated through.
- Season with salt and pepper, garnish with herbs, and serve hot.

- You can substitute turkey sausage for a leaner option.
- For extra flavor, add red pepper flakes or Parmesan cheese.
