- 2 cups sliced mushrooms
- 2 cups fresh spinach
- 1 cup grated Parmesan cheese
- 1 cup heavy cream
- 2 tbsp olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions; drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add mushrooms and cook until tender, about 5 minutes.
- Add garlic and cook for another minute.
- Stir in heavy cream and parmesan, cook until sauce thickens.
- Add spinach and cook until wilted.
- Mix in cooked pasta, season with salt and pepper, and serve warm.
Notes
Adjust the amount of cream and cheese to control the richness. Use fresh spinach for best flavor. For a vegan option, substitute with plant-based cream and cheese.
