Ingredients

- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon white vinegar
- Salt and pepper to taste
- Paprika for garnish
- Fresh chives for garnish
Instructions
- Place eggs in a saucepan and cover with water. Bring to a boil, then transfer to ice water to cool completely.
- Peel the eggs and slice in half lengthwise. Remove yolks into a mixing bowl.
- Mash yolks with mayonnaise, mustard, vinegar, salt, and pepper until smooth.
- Spoon or pipe the yolk mixture back into the egg whites.
- Garnish with paprika and chopped chives. Serve chilled.
Notes
- For a tangier flavor, add a dash of hot sauce or vinegar to the yolk mixture.
- You can prepare the eggs the day before and assemble just before serving.
