- 1 pound cooked shredded chicken
- 1 head cauliflower, chopped into florets
- 1/2 cup buffalo sauce
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Toss cauliflower florets with olive oil, garlic powder, onion powder, salt, and pepper.
- Spread cauliflower on a baking sheet and roast for 20 minutes until tender and slightly crispy.
- In a large bowl, combine shredded chicken, buffalo sauce, sour cream, and half of the cheese.
- Transfer mixture to a casserole dish, top with roasted cauliflower, and sprinkle with remaining cheese.
- Bake for 20 minutes until cheese is melted and bubbly. Garnish with chopped herbs before serving.
