  • Total Time: 1 hour 10 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 4 large russet potatoes
  • 2 cups cooked chicken, shredded
  • 1/2 cup ranch dressing
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked bacon bits
  • 2 tbsp chopped green onions

  3. Once potatoes are cool enough to handle, slice in half and scoop out some flesh, mixing it with the chicken filling.
  4. Fill potato skins with the chicken mixture, top with shredded cheese, and bake for another 10 minutes until cheese melts.
  5. Garnish with chopped green onions before serving.
