Ingredients

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup small pasta (ditalini)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, garlic, carrot, and celery until tender, about 5 minutes.
  3. Add beans, tomatoes, broth, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add pasta and cook until al dente, about 8 minutes.
  6. Garnish with fresh basil and serve hot.
