- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups fresh tomatoes, diced
- 2 cups vegetable broth
- 1 teaspoon sugar
- Salt and pepper to taste
- 1/4 cup heavy cream or coconut milk
- Fresh basil leaves for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion and garlic until translucent.
- Add diced tomatoes and cook for 10 minutes.
- Pour in vegetable broth, add sugar, salt, and pepper, then bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Blend the soup until smooth using an immersion blender or regular blender.
- Stir in heavy cream or coconut milk, then serve garnished with basil.
