- 1 1/2 cups rolled oats
- 1/2 cup pumpkin puree
- 1/4 cup maple syrup
- 1 cup milk
- 2 eggs
- 1 teaspoon cinnamon

- Optional toppings: pecans, raisins, yogurt, honey
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- In a large bowl, mix oats, pumpkin puree, maple syrup, milk, eggs, cinnamon, nutmeg, vanilla, and salt until combined.
- Pour mixture into the prepared baking dish and smooth the top.
- Bake for 30-35 minutes until golden and set.
- Allow to cool slightly, then serve topped with pecans, yogurt, or honey.
