Ingredients

  • 1 cup wild rice, rinsed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 cup cream or coconut milk
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, cook until tender, about 5 minutes.
  2. Add garlic and cook for 1 minute.
  3. Stir in wild rice and vegetable broth. Bring to a boil, then reduce heat to simmer, cover, and cook until rice is tender, about 45 minutes.
  4. Stir in cream or coconut milk, thyme, salt, and pepper. Simmer for another 10 minutes.
  5. Serve hot, garnished with fresh parsley.
