- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup sour cream
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar (optional glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan and set aside.
- In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
- In another bowl, mix sour cream, oil, eggs, and vanilla until smooth.
- Combine wet and dry ingredients, then fold in blueberries gently.
- In a small bowl, beat softened cream cheese until creamy.
- Pour half the batter into the prepared pan, then spread cream cheese over it, followed by the remaining batter.
- Create swirls gently with a knife. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Allow to cool, then optionally drizzle with powdered sugar glaze before serving.
Notes
- Use fresh blueberries for the best flavor. Do not overmix the batter to keep the bread tender.
