  • 1 cup sour cream
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar (optional glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan and set aside.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, mix sour cream, oil, eggs, and vanilla until smooth.
  4. Combine wet and dry ingredients, then fold in blueberries gently.
  5. In a small bowl, beat softened cream cheese until creamy.
  6. Pour half the batter into the prepared pan, then spread cream cheese over it, followed by the remaining batter.
  7. Create swirls gently with a knife. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool, then optionally drizzle with powdered sugar glaze before serving.
