- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter
- 1 cup fresh blackberries
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract

- For blackberry frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/2 cup blackberry jam
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 8-inch cake pans.
- In a bowl, mix flour, baking powder, and salt. In another bowl, cream butter and sugar until fluffy.
- Beat in eggs one at a time, then add vanilla. Gradually add dry ingredients alternating with milk.
- Gently fold in fresh blackberries. Divide batter between pans and bake for 25-30 minutes.
- Allow cakes to cool. Beat butter until creamy, add powdered sugar, and fold in blackberry jam to make frosting.
- Spread frosting between layers and over the top. Garnish with additional fresh blackberries.
Notes
- You can substitute fresh blackberries with frozen, thawed.
- Chill the cake before serving for best flavor.
