Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine spinach, feta, garlic, olive oil, salt, and pepper.
- Cut a slit in each salmon fillet to create a pocket, then stuff with the spinach mixture.
- Place fillets on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes until cooked through and slightly crispy on top.
- Serve warm with lemon wedges.
