Ingredients

  • 1 pound dried red kidney beans
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 3 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 lb smoked sausage, sliced
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 4 cups cooked white rice
  • Chopped scallions for garnish

Instructions

  1. Soak beans overnight in water, then drain.
  2. In a large pot, sauté onions, bell pepper, celery, and garlic until softened.
  3. Add soaked beans, sausage, Cajun seasoning, thyme, bay leaves, salt, and pepper.
  4. Cover with water and simmer on low heat for 1.5 to 2 hours until beans are tender.
  5. Remove bay leaves, adjust seasoning as needed.
  6. Serve hot over cooked rice, garnished with scallions.
