- 1 pound dried red kidney beans
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 celery stalks, chopped
- 3 cloves garlic, minced
- 1 lb smoked sausage, sliced
- 2 teaspoons Cajun seasoning
- 1 teaspoon thyme
- 2 bay leaves
- Salt and pepper to taste
- 4 cups cooked white rice
- Chopped scallions for garnish
Instructions
- Soak beans overnight in water, then drain.
- In a large pot, sauté onions, bell pepper, celery, and garlic until softened.
- Add soaked beans, sausage, Cajun seasoning, thyme, bay leaves, salt, and pepper.
- Cover with water and simmer on low heat for 1.5 to 2 hours until beans are tender.
- Remove bay leaves, adjust seasoning as needed.
- Serve hot over cooked rice, garnished with scallions.
Notes
- For extra flavor, add a splash of hot sauce or Worcestershire sauce during cooking.
- Use cooked or canned beans for quicker preparation.
