- 2 lbs beef stew meat, cubed
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons paprika
- 1 teaspoon caraway seeds
- 1 bell pepper, sliced
- 2 large tomatoes, chopped
- 4 cups beef broth
- 2 carrots, sliced
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat.
- Add beef cubes and brown on all sides, then remove and set aside.
- In the same pot, sauté onions and garlic until fragrant.
- Stir in paprika and caraway seeds, cook for 1 minute.
- Return beef to the pot, add chopped tomatoes, bell pepper, carrots, and beef broth.
- Bring to a boil, then simmer on low for 1.5 to 2 hours until beef is tender.
- Season with salt and pepper to taste. Serve hot with crusty bread or mashed potatoes.
